These Gluten-Free Waffles Recipe (Video) are light, tender, fluffy, low carb, keto-approved, and best of all -- actually taste amazing! There are many ways you can serve these waffles.
One is a savory way, by topping them with some Greek yogurt, salmon, and your favorite vegetables. Or you can serve them sweet with a large dollop of whipped heavy cream and drizzle with homemade strawberry sauce! Either way is super delicious and satisfying!

They are absolutely amazingly eaten in a savory way. When we think of waffles for breakfast, we typically imagine pouring maple syrup, or some other sweet topping over them. But some of you may be glad to discover that waffles can be more versatile than that.
Especially those who are more savory (rather than sweet) breakfast type of folks. This is a wonderful, flavor-neutral baseline breakfast bread that is fitting for your favorite savory breakfast foods. And is also made on the healthier side for you.
One incredibly tasty way to enjoy it is to top each waffle with a slice of cold wild-cut smoked salmon and your favorite vegetables, to give you a deliciously nutritious breakfast or even brunch!
They are super simple to make and are freezer friendly, which allows you to squirrel some away if you need to save time in the morning. Then, all you'll need to do is toast it in a toaster oven, and you're set to get ahead in your day. Enjoy!
Gluten-Free Waffles Ingredients
- Gluten-Free all-purpose baking flour
- Coconut flour
- Monkfruit sweetener
- Sea salt
- Baking powder

- Eggs (I used home eggs)
- Cashew or coconut milk
- Coconut oil (liquified)

How to Make Gluten-Free Waffles
Sift dry ingredients, gluten-free all-purpose baking flour, coconut flour, baking powder, and sea salt into a small glass bowl and mix using a hand whisker. Set aside until ready for use.
Into a second small bowl, beat eggs, add Monkfruit sweetener, cashew, or coconut milk and whisk well until thoroughly combined.
Next, add liquid coconut oil and whisk well once more.
Finally, add dry ingredients in two separate additions and whisk well. Use cashew or coconut milk to reach the desired thickens of your waffles.
Note: the thinner the batter, the airier the waffles will be.
Waffle Cooking Instructions
Using a tablespoon-size ice cream scoop, add a scoop of batter onto a preheated waffle maker. I like to use a cute small four-inch waffle maker to make these waffles. Cook for a minute or until the waffle maker indicator light will come on, letting you it's done.
Remover from the waffle maker and onto a platter. Repeat with the rest of the batter.
Top waffle with a topping of your choice and enjoy!
Waffle Freezing Instructions
For storing, cool waffles completely after they are cooked. Place them into a freezer container or a freezer Ziploc back and freeze for up to a month.
