    How to Preserve Homegrown Zucchini (Video)

    I love gardening and the concept of garden-to-plate healthier eating. It’s that time of the year when you harvest this freshly crisp zucchini from the garden and stock up for the winter months. One of the ways you can preserve your wonderful little blessings to enjoy all year round is to grate and freeze this type of veggie.

    Some may think that it’s so simple to do so, that I didn’t need to spend my time showing this in detail, but there are some steps to follow to get the best end result. Speaking from my experience, when I was just a newlywed wife, (I lost my mom shortly after I got married) and there was nobody to tell me these little secrets.

    Back then there was no Pinterest nor as many bloggers to get all the tips and tricks from. I didn’t even know that you can actually freeze your own fresh grated zucchini and later when it’s not in season you can make many things out of the frozen zucchini like Valya’s Best Zucchini Bread, Zucchini Chocolate Chip Muffins, Honey Chocolate Zucchini Muffins just to name a few. But the variety is endless.

    You will need:

    Sandwich Ziploc bags
    Grater
    Homegrown zucchini

    Instructions:

    Rinse and pat dry the zucchini with a paper towel. Homegrown zucchini is much larger in size, then store-bought, which requires slicing into smaller pieces for easier handling.

    Grate the zucchini, then scoop 2 cups and pack into a sandwich size Ziploc bag or as much as needed to unfreeze and use for a certain type of recipe. Lay bags flat when freezing the grated zucchini for faster thawing once needed.

    Note

    Do not re-freeze thawed zucchini or it will not hold its shape. Surely it will be mushy going through the process again.

    I prefer using this kind of grater not the regular box grater to grate the zucchini because once you unfreeze, it does not look and feel mushy which makes it pretty easy to use for most baking recipes.
