  • 1 cup - almond flour
  • 1 tsp. - baking soda
  • 1 tsp. - baking powder
  • ½ tsp. - sea salt
  • 1 tsp. - ground cinnamon
  • 4 - ripe bananas
  • 3 medium - eggs
  • 4 oz. - unsalted softened butter
  • ½ cup - brown sugar
  • ½ cup - coconut sugar
  • 2 tsp. – pure vanilla extract

How to Make Gluten-Free Banana Muffins

  • To make banana coconut muffins, you will need to preheat your oven to 350°F and line a muffin pan with baking cup liners. Make sure to measure out all the dry ingredients and sift them through a sifter to remove any lumps.
  • Next, take your softened butter and beat it with coconut and brown sugar until well-mixed. Then, add in your eggs and vanilla extract and mix once again until fully combined. Once mixed, add in the mashed bananas and mix until everything is smooth and well-blended.
  • Finally, add in your dry ingredients and mix once again until everything is fully combined.
  • Using a cookie scoop, scoop the batter into your muffin pan lined with baking cups and bake for 20 minutes at 350°F.
  • Once the muffins are finished baking, remove them from the pan and let them cool completely. Now your delicious banana coconut muffins are ready to be enjoyed!
