- 1 cup - gluten-free flour blend
- 1 cup - almond flour
- 1 tsp. - baking soda
- 1 tsp. - baking powder
- ½ tsp. - sea salt
- 1 tsp. - ground cinnamon
- 4 - ripe bananas
- 3 medium - eggs
- 4 oz. - unsalted softened butter
- ½ cup - brown sugar
- ½ cup - coconut sugar
- 2 tsp. – pure vanilla extract
How to Make Gluten-Free Banana Muffins
To make banana coconut muffins, you will need to preheat your oven to 350°F and line a muffin pan with baking cup liners. Make sure to measure out all the dry ingredients and sift them through a sifter to remove any lumps.
Next, take your softened butter and beat it with coconut and brown sugar until well-mixed. Then, add in your eggs and vanilla extract and mix once again until fully combined. Once mixed, add in the mashed bananas and mix until everything is smooth and well-blended.
Finally, add in your dry ingredients and mix once again until everything is fully combined.
Using a cookie scoop, scoop the batter into your muffin pan lined with baking cups and bake for 20 minutes at 350°F.
