  • ½ cup - gluten-free all-purpose baking flour
  • ½ cup - coconut flour
  • ¼ tsp. – baking powder
  • tsp. – sea salt
  • 2 large – eggs, I used home eggs
  • 1 tbsp. – Monkfruit sweetener
  • 1 cup – organic cashew or coconut milk
  • ¼ cup – melted extra virgin coconut oil
How to Make Gluten-Free Waffles
  1. Sift gluten-free all-purpose baking flour, coconut flour, baking powder, sea salt into a small glass bowl and combine all dry ingredients together using a hand whisker. Set aside until ready for use.
  2. Into a second small bowl beat eggs, add Monkfruit sweetener, cashew or coconut milk and whisk well until combined.
  3. Next, add melted coconut oil and whisk well once more.
  4. Finally, add dry ingredients in two separate additions and whisk well. Use cashew or coconut milk to reach the desired thickens of your waffles.
  5. Note: the thinner the batter you make the airy the waffles will be.
Waffle Cooking Instructions
  1. Using a tablespoon in size ice cream scoop add batter onto preheated waffle maker. I used a single four-inch waffle maker to make these waffles. Cook for a minute or until the waffle maker indicator light will light on.
  2. Remover from the waffle maker and onto a platter. Repeat the same instructions with the rest of the batter.
  3. Top waffle with topping of your choice and enjoy!
Waffle Freezing Instructions
  1. Cool waffles completely after they are cooked. Place them into a freezer container or a freezer Ziploc back and freeze for up to a month.
